Vegan Pear Crumble

Ripe pears tossed with brown sugar and cinnamon, baked under a flour and oat crumble topping made with cold vegan butter, so the top stays crisp and clumpy instead of pasty.

Ingredients
  

Pear filling
  • 5 medium ripe but firm pears Bartlett, Bosc, or Anjou, sliced about 1/4 inch thick
  • 1/4 cup brown sugar packed
  • 1 tablespoon cornstarch this is what thickens the pear juices
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • salt a pinch
Crumble topping
  • 3/4 cup all-purpose flour
  • 3/4 cup rolled oats old-fashioned, not instant
  • 1/2 cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter block style, cold from the fridge and cubed

Method
 

  1. Preheat the oven to 375F (190C) and lightly grease a 9x9 inch baking dish, or something similar in size.
  2. Slice the pears into pieces about 1/4 inch thick, peels on, and toss them in a large bowl with the brown sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt until every slice is coated. Pile the mixture into the prepared dish and spread it level.
  3. Make the topping: whisk the flour, oats, brown sugar, cinnamon, ginger, and salt together in a bowl, then add the cold cubes of vegan butter. Rub the butter into the dry mix with your fingertips or a fork until you get clumps the size of small peas that hold together when squeezed.
  4. Slide the bowl of topping into the freezer for 15 minutes while the oven finishes heating. Cold vegan butter melts later in the bake, and that is what keeps the crumble crisp.
  5. Scatter the chilled topping evenly over the pears in loose clumps, and do not press it down. A loose layer bakes into crunchy ridges, while a packed one turns into a dense roof.
  6. Bake for 35 to 40 minutes, until the filling bubbles at the edges and the top is golden brown. If the topping darkens before the filling is bubbling, lay a piece of foil loosely over the dish and keep baking.
  7. Let the crumble rest for 15 minutes before serving. The cornstarch needs that time to set, so the filling cuts into neat jammy spoonfuls instead of running across the plate.

Notes

Both the filling and the topping can be made a few hours ahead. Keep them in separate containers in the fridge, then assemble and bake as written, adding a few extra minutes to the bake time if the dish goes in cold from the fridge.
