Vegan Ranch Dressing

A creamy plant-based ranch dressing made with vegan mayonnaise, soy milk, lemon juice, and fresh dill, chives, and parsley, ready in about 10 minutes.

Ingredients
  

  • 1/2 cup vegan mayonnaise
  • 1/4 cup plain unsweetened soy milk or oat milk, for a slightly sweeter finish
  • 1 tablespoon lemon juice fresh, plus more to taste
  • 1/2 teaspoon white wine vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper freshly ground
  • 2 tablespoons fresh dill finely chopped
  • 1 tablespoon fresh chives finely chopped
  • 1 tablespoon fresh parsley finely chopped

Method
 

  1. Pour the soy milk into a small bowl or measuring cup and stir in the lemon juice. Let it sit for 5 minutes. The mixture will look slightly curdled, and that's exactly what you want, since it has turned the milk into a tangy vegan buttermilk.
  2. In a medium bowl, combine the vegan mayonnaise with the thickened soy milk mixture and whisk until completely smooth with no streaks left.
  3. Stir in the white wine vinegar, garlic powder, onion powder, salt, and black pepper, then whisk again until everything is evenly combined.
  4. Fold in the chopped dill, chives, and parsley. Taste it, then adjust with more salt or another squeeze of lemon juice if it needs it.
  5. Cover the bowl and refrigerate for at least 30 minutes so the flavors come together. The dressing will thicken slightly as it chills, which is normal.

Notes

Makes about 1 1/2 cups of dressing. This is a good one to make ahead for a week of salads, since the flavor actually improves overnight.
