Vegan Smoked Salmon

Whole-roasted carrots shaved into ribbons and marinated with tamari, rice vinegar, maple syrup, liquid smoke, and nori, for a silky, smoky appetizer that eats like lox on a bagel.

Ingredients
  

For the carrots
  • 4 large thick carrots about 8 ounces each, scrubbed
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt
For the smoky marinade
  • 1/3 cup soy sauce or tamari
  • 2 tablespoons rice vinegar unseasoned
  • 1 tablespoon pure maple syrup
  • 1 teaspoon liquid smoke hickory or applewood
  • 1 tablespoon olive oil
  • 1 sheet nori torn into small pieces
  • 1/2 teaspoon coarsely cracked black pepper
To serve
  • bagels and vegan cream cheese for serving
  • capers and fresh dill for serving, optional

Method
 

  1. Heat the oven to 400°F (200°C). Rub the whole scrubbed carrots with the olive oil and salt, wrap them together loosely in foil, and roast directly on the oven rack until completely tender when pierced with a knife, 30 to 40 minutes depending on thickness. Unwrap and let them cool until you can handle them.
  2. Using a vegetable peeler, shave the cooled carrots lengthwise into long thin ribbons. Discard the woody core ends if they resist the peeler, and don't worry if a few ribbons tear, shorter pieces cure just as well.
  3. Whisk the soy sauce, rice vinegar, maple syrup, liquid smoke, and olive oil in a shallow dish. Add the carrot ribbons, the torn nori pieces, and the cracked pepper, and turn everything gently so every ribbon is coated. Cover and refrigerate for at least 4 hours or overnight, turning once or twice if you think of it.
  4. Lift the ribbons out of the marinade with a fork, letting the excess drip off, and pick out and discard the nori pieces. Serve on bagels with vegan cream cheese, capers, and dill. Keep any leftovers in the marinade in a sealed jar in the fridge.

Notes

Makes enough for about 4 bagels as an appetizer. The ribbons need at least 4 hours in the marinade, overnight gives a deeper flavor. Stored in their marinade in a sealed jar in the fridge, they keep for 4 to 5 days. I don't freeze them, freezing turns the silky texture watery.
