Ingredients
Method
- Chill a short rocks glass in the freezer for 10 minutes, or fill it with cold water and ice while you get everything else ready.
- Spoon the coconut cream into a small bowl or jug, add the cold oat milk and the pinch of salt, and whisk until the mixture is smooth, thick, and just pourable. Keep it cold until the last moment.
- Fill the chilled glass with ice, pour in the vodka and coffee liqueur, and stir for about 10 seconds so the base chills and picks up a little dilution.
- Pour the coconut cream mixture slowly over the back of a spoon held just above the drink, so it settles into a soft layer on top of the dark base.
- Dust with cocoa powder or grate a little vegan dark chocolate over the top, add a few coffee beans if you like, and serve right away with a stirrer.
Notes
Makes one drink. The base ratio is two parts vodka to one part coffee liqueur, with roughly one and a half parts of the whisked cream mix on top, so it scales easily for a round. Use coconut cream from a chilled can rather than coconut milk, since the milk is too thin to float. The cocoa powder, grated vegan dark chocolate, and coffee beans are garnishes only, so add them at the end. Stir before drinking if you want the marbled look; the layers hold for a few minutes once poured.
